Boerejongens (Raisins and Brandy)

1 kg raisins
2 cups sugar
2 cups water
2 pieces cinnamon
2 cardamom pods, crushed

Wash the raisins and place with sugar, water, cinnamon and cardamom in a pot and
heat. Boil slowly for 10 minutes and stir till sugar is dissolved. Remove the raisins
from the syrup and pack in sterilized jars. Fill the jars with brandy or a 50/50
mixture of brandy and syrup. Remove the cinnamon and cardamom. Keep for at least
3 months before eating.
Peach Wine

This is not strictly a wine, but a delicious and refreshing amalgam of peaches, wine and eau de vie.

6 ripe peaches, peeled, halved and stoned
1 liter (4 cups) dry white wine
200 gram (1 cup) caster sugar
175 ml (3/4 cup) eau de vie

Poach the peach halves in the wine for about 15 minutes, until tender. Cover and set aside overnight.
Remove the peaches from the pan and strain the liquid through a coffee filter. Add the sugar and eau de vie and stir to dissolve the sugar.
Pour the wine into clean, dry sterilized bottles, seal and label. Store in the fridge and drink within 2 weeks. Serve well chilled


JUICE IDEAS

There are many wonderful combinations for fruit and vegetable juices.

* Freshly extracted carrot and apple, made by combining ½ a glass of each
* Add a stick of celery (this gives it a salty taste)
* Add 1 bulb of raw beetroot (great colour!)
*Add an equal quantity of fresh pineapple juice if you prefer something
   sweeter

For a healthy pre-dinner juice, try a combination of fresh ripe tomato,
   celery and carrot

NUT SHAKE

¼ cup raw almonds (or cashews or sesame paste) per person
½ cup chopped pineapple (or strawberries or other acid fruit)
fresh apple juice
Blend nuts until very fine and smooth. Add fresh fruit and blend well until creamy, thinning down with fresh juice and a few ice cubes.
Ring the changes by adding granadilla or passion fruit pulp
