Tuna Casserole

Ingredients


bullet 2 tins Tuna
bullet 2 large onions, sliced
bullet 250 g fresh mushrooms or 1 tin sliced mushrooms
bullet butter or oil for frying
bullet 300-400 ml white sauce

Method

  1. Slice and fry the fresh mushrooms in butter until done.
  2. Remove from pan and fry onions until transparent; add tuna and stir until well heated.
  3. Add mushroom and white sauce.
  4. Mix well and season to taste.

Serve with rice and a fresh mixed salad.

Tuna and mushroom wedges

Ingredients

medium potatoes
2 onions, cut in quarters
2 tsp sunflower oil
250 g mushrooms, sliced
½ packet brown onion soup powder
1 tin tuna in brine
2   cups water (use the water from the tuna
 

Method

  1. Cut potatoes lengthwise into wedges
  2. Place half of the wedges in a single layer in a microwave dish, add a tablespoon of water and microwave covered for 6 minutes.  Repeat with the rest of the wedges.
  3. Sauté onions and mushrooms in the oil.
  4. Add soup powder water, then stir until the sauce thickens.
  5. Flake tuna and add to sauce.
  6. Place the cooked wedges on a serving plate, top with tuna sauce and serve
